I am now so grateful for all the hot meals and love\nmy mom brought to our family, but also for growing up to know what real food\ntastes, smells and feels like. We always gathered around the table and had food\ntogether, and the best memories are the ones that revolve around food and\ngatherings. <\/strong><\/p>\n\n\n\n<p style=\"text-align:justify\"><strong>Now pastries are without a doubt my mom\u2019s specialty\nand when we were kids, she baked them quite often. They\u2019re so versatile, taste\namazing, everyone likes them, and she is a pastries\u2019 master; she could make\nthem with her eyes closed. Mom has a nickname \u201cem al ajeen\u201d, mother of dough,\nbecause by looking at the ingredients she can tell you if the dough is going to\nbe good or not and how the texture is going to be like. For a very long time\nshe used to make dough without measurements and only relying on her sense of\ntouch, until we started insisting on wanting a recipe. They can be filled, or topped with literally anything, but traditionally, at least in my family, the fillings\/toppings are, <\/strong><a href=\"http:\/\/test.thebitterolive.com\/pantry-staples\/zatar\/\"><strong><em>za\u2019atar<\/em><\/strong><\/a><strong>, white cheese, chili tomato paste, ground meat, <\/strong><a href=\"http:\/\/test.thebitterolive.com\/pantry-staples\/labneh\/\"><strong><em>labneh<\/em><\/strong><\/a><strong> and spinach. &nbsp;<\/strong><\/p>\n\n\n\n<p style=\"text-align:justify\"><strong>In later posts, I will introduce you to all my\nmom\u2019s dough secrets and to other recipes, but today I am sharing the spinach\nrecipe. <\/strong><strong>When we were kids, <\/strong><strong>more often than not, mama made those spinach\npastries for lunch; these were some of the very few times she could get me to\neat my veggies and I just loved them!<\/strong><strong><\/strong><\/p>\n\n\n\n<p style=\"text-align:justify\"><strong>In my family, the spinach pastries are served with a parsley <a href=\"http:\/\/test.thebitterolive.com\/pantry-staples\/tahini\/\"><em>tahini<\/em><\/a> dip. I have no idea why and I don\u2019t see people serving it this way, but this is how we do it. I must say though, I really like it this way and I think they go really well together, plus tahini makes almost everything taste better. However, a person who might not be used to this might think of this as an unusual combination. <\/strong><\/p>\n\n\n\n<h2><strong>Let\u2019s get cooking!<\/strong><\/h2>\n\n\n\n<p style=\"text-align:justify\"><strong>There are two components to the spinach\npastries, dough and filling. The dough recipe is very traditional and one of\nthe few dough recipes where mom uses olive oil. The filling ingredients are\ntraditional, but the way mom prepares it is not. People usually avoid liquids to make sure the dough doesn\u2019t\nbecome soggy. However, having had endless spinach pastries in my life in my mom\u2019s\nkitchen, I can reassure you that this filling is so tasty and would not impact\nthe dough.<\/strong><\/p>\n\n\n<div Knead by hand on a lightly greased surface until smooth and elastic for about 10 minutes.<\/div><\/li><li id=\"wprm-recipe-2713-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Transfer to a lightly greased bowl, cover and let rest for 45 minutes \u2013 1 hour.<\/div><\/li><li id=\"wprm-recipe-2713-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Meanwhile start preparing the filling, add all ingredients under filling to a large bowl and mix to combine. Taste and adjust salt if needed.<\/div><\/li><li id=\"wprm-recipe-2713-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\"><span style=\"display: block;\">Preheat oven to 220 \u00b0C and lightly grease 2 baking sheets with olive oil.<\/span><\/div><\/li><li id=\"wprm-recipe-2713-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Divide dough into small balls, (18 \u2013 21) and cover with a kitchen towel so that dough doesn\u2019t dry out. Flatten each ball with your hand into a large circle, almost \u00bd cm thick. Add filling to the center of the dough. It is very important to leave the edges of the dough dry, otherwise you won\u2019t be able to close the dough. Fold 3 edge of the dough over the filling and pinch to close the 3 sides together to form a triangular shape.<\/div><\/li><li id=\"wprm-recipe-2713-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Bake in the oven for 15 \u2013 20 minutes or until golden brown.<\/div><\/li><li id=\"wprm-recipe-2713-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px\">Serve warm with a tahini parsley dip.<\/div><\/li><\/ul><\/div><\/div>\n\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><ul>\n<li>Add salt to taste.
